Becoming the Queen of Leftovers with the Cooking Light Diet

I’m just going to say it: Cooking for one is hard. Sometimes it’s easier to make macaroni and cheese every meal and just call it a day. But sadly, not only is my waistline suffering from this practice, but my mind is as well. I need to start eating vegetables again.

Full disclosure: I am a bomb cook. I’m fully confident that I could win Chopped purely based on the way I dominate impromptu homemade brunches.

That being said, I never cook for myself. In my mind, the whole point of cooking is to make other people happy. I had forgotten that food can make me happy, too. Especially healthy food.

My first meal I made on the Cooking Light Diet was the Tilapia with Lemon-Garlic Sauce. I’ve made it about 10 more times since then. Sooooo good. Like crazy good. That sauce went all over my green beans, and I was sold.

I haven’t been strict with the Diet. I don’t need to lose weight. I need to eat actual meals instead of popcorn for dinner. Planning ahead has helped a great deal in that regard. I’m able to cook dinner three times a week so the leftovers from those dinners will be the leftovers on days that are a little too long.

The Cooking Light Diet has helped me start cooking dinner for myself again. Now I just need to focus on planning ahead for breakfast and lunch. I sure need some help with that, and I think this tool might be just the thing.
