If you could have any cookie in the world, and your choice is without a doubt oatmeal, then you need to make these cookies. They're made with apples, which add a unique apple-pie flavor and a natural sweetness, which eliminates the need for tons of sugar.

Flax is also the star in these cookies, which boosts the fiber, filling you up so you feel satisfied after one. Oh, but the sweet cinnamon flavor and crunchy texture will have you reaching for more. And because they're under 150 calories, go ahead and have two. Actually, you might want to double the recipe, because these cookies won't last long in the cookie jar.

Apple Flax Oatmeal Cookies

Ingredients

3 tablespoons flax meal
3 tablespoons water
3/4 cups whole-wheat flour
1/2 cup organic sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/2 cup vegetable oil
1 small apple, peeled and chopped
1 cup quick oats
1/4 cup walnuts

Directions

  1. Preheat oven to 350°F.
  2. Place 1 tablespoon flax meal in a small bowl. Mix together with 3 tablespoons water.
  3. Let that thicken up (it's an alternative to using an egg) while you mix the rest of the ingredients together in a medium bowl. Then stir in the flax/water mixture.
  4. Spoon out cookies onto a lightly greased cookie sheet. Cook 12 to 15 minutes, or until edges are slightly brown. Place cookies on a cooling rack.
