Before we move on, I need to tell you about this crab and share a new word that I learned: surimi.

Louis Kemp Crab Delights are made up of a combinations of Alaskan caught Pollock (a mild whitefish, often used in fish sticks!) and real snow crab. The combo is called “surimi” in Japan. Many other countries call this imitation crab “surimi” but don’t consider it imitation because it is made with real crab and whitefish.

Crab Delights make for an amazing addition to pastas (like this on), or loaded into a hot cheesy, crab dip (that dip is so addictive!). They are great for snacks – gluten free, low-cal, high in omega-3s, and easy to pack!

Yield – 8 servings

Preparation Time – 25 minutes

Cooking Time – 25 minutes

Ingredients

  • 12 oz. elbow or small shell pasta
  • 2 – 8 oz. packages Louis Kemp Crab Delights
  • 6 Tbsp butter
  • 2 celery ribs, chopped
  • 1 small white onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 4 Tbsp flour
  • 3 cups milk
  • 1 Tbsp seafood seasoning
  • 2 Tbsp spicy brown mustard
  • 1 cup shredded white cheddar cheese
  • 2 cups shredded Swiss cheese, divided
  • about 1 cup bread crumbs
  • 1/4 to 1/2 cup grated Parmesan cheese
  • Fresh veggies, as side dish

Directions

  • Preheat the oven to 350 F.
  • Cook the pasta as directed. Drain and spread it into a 9×13-inch glass baking dish. Mix the crab meat in with the pasta.
  • In a large skillet, melt the butter and saute the chopped celery, onion and red bell pepper for 4-6 minutes. Add the flour and mix together until ‘paste’ forms on the veggies. Quickly pour and whisk in the milk, to keep the flour from clumping. Bring milk to bubbling over medium heat, as the sauce will thicken.
  • Stir in the seafood seasoning, spicy brown mustard, the white shredded cheddar cheese and 1 cup of the shredded Swiss cheese. Let bubble, stirring often to create a smooth cheese sauce. Season with a little salt and pepper, to taste.
  • Pour the cheese sauce over the pasta and crab and gently stir around in the baking dish to mix together. Sprinkle the other 1 cup of shredded Swiss cheese over the top, followed by a thin layer of bread crumbs and thin layer of Parmesan cheese.
  • Bake in the preheated oven for 20 to 25 minutes, or until cheese and bread crumbs are golden brown on top.
  • Prepare fresh veggies.
  • Serve Crab Cake Mac n Cheese with fresh veggies.
